INGREDIENTS
1 large egg
1 (8 ounce) skinless, boneless chicken breast
1 tablespoon heavy whipping cream
1 ounce grated Parmesan cheese
1 ½ ounces pork rinds, crushed
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
1 tablespoon ghee (clarified butter)
½ cup jarred tomato sauce
¼ cup shredded mozzarella cheese
½ teaspoon red pepper flakes (Optional)
INSTRUCTIONS
1. Preheat the broiler and position the oven rack about 6 inches from the heat source.
2. Slice the chicken breast horizontally down the middle, from one side to within 1/2 inch of the other. Spread the two sides out, just like an open book. Pound the chicken flat to about 1/2-inch thickness.
3. In a mixing dish, beat together the egg and cream. In a separate shallow bowl or plate, mix crumbled pork rinds, Parmesan cheese, salt, garlic powder, red pepper, black pepper, and Italian seasoning.
4. Dip chicken into egg mixture and coat well. Press the chicken into the breading, coating both sides thickly.
5. Heat a pan over medium-high heat; add the ghee. Place the chicken in the pan and cook until no longer pink in the center and the juices run clear, about 3 minutes on each side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Be cautious to keep the breading in place.
6. Put the chicken on a baking sheet. Cover with tomato sauce, then top with mozzarella cheese. Broil for about 2 minutes, or until the cheese bubbles and is barely browned.
