Keto Cauliflower Breakfast Pizza

Get your day started right with our Keto Cauliflower Breakfast Pizza! Indulge in a low-carb treat that will kickstart your day with flavor and nutrition thanks to its crunchy crust and flavorful topping blend. Ideal for a filling and healthy morning meal!

INGREDIENTS

1 tsp. paprika
1 large head cauliflower
8 large eggs, divided
1 c. shredded white Cheddar
2 cloves garlic, minced
kosher salt
Freshly ground black pepper
1 Tbsp. extra-virgin olive oil
1 large onion
2 red bell peppers, chopped
1 c. ham
1 1/2 c. Shredded Monterey Jack
Freshly chopped chives, for garnish

INSTRUCTIONS

1. Preheat oven to 425º and prepare a parchment-lined baking sheet. Use small box grater to shred cauliflower into thin crumbs. Transfer to big bowl.
2. Sprinkle salt and pepper over 2 eggs, white cheddar, garlic, and paprika in bowl. Mix well.
3. Pat dough into a crust on baking sheet. Bake 25 minutes till golden and dry.
4. Heat oil in a big skillet on medium. Cook onion and peppers 8 minutes until tender. Stir in ham. Mix the remaining 6 eggs with salt and pepper in a small bowl. Scramble eggs in skillet for 3 minutes.
5. Broil cauliflower crust after removing from oven. Top with a thin salsa coating. Scrambled eggs with Monterey jack on top.
6. Broil cheese 2 minutes until golden. Add chives and serve.
