INGREDIENTS
2 tbsp prepared Caesar Salad Dressing (30 ml)
5 to 7 pork rinds, crushed into smaller pieces (10 g/ 0.4 oz)
1 skinless chicken breast (170 g/ 6 oz)
1/2 head of Romaine lettuce or any lettuce of choice (150 g/ 5.3 oz)
2 tbsp grated or flaked Parmesan cheese (10 g/ 0.4 oz)
INSTRUCTIONS
1. Season the chicken breast with salt and pepper and rub it with one teaspoon of olive oil or ghee. Heat another teaspoon of oil in a skillet on medium. Chicken breasts should be cooked for 10 minutes until opaque.
2. Flip the chicken breast, cover the pan, and simmer for 10 minutes. After cooking, let it rest for 5 minutes before slicing.
3. Divide the lettuce into pieces and arrange in a salad bowl. Add sliced chicken, parmesan cheese, and 2 teaspoons (30 ml) salad dressing. Put broken pork rinds on top. Chicken Cracklings can replace pork rinds.
