INGREDIENTS

1 pound large shrimp thawed
1 tablespoon chopped cilantro
2 cups shredded lettuce
¼ red onion diced
2 avocados sliced
3 tablespoons extra-virgin olive oil
1 teaspoon cumin
1/2 teaspoon salt
3 tablespoons lime juice
1/2 teaspoon fresh cracked pepper

INSTRUCTIONS

1. Heat up a big saucepan of water until it boils. Reduce the temperature to medium. Put the shrimp in a mesh strainer or steamer attachment over the water in the pot and cover it with a lid. Steam for 4–6 minutes, or until the shrimp curl and turn brilliant pink.
2. Take out and place somewhere to cool. Use a basin big enough to accommodate all the salad ingredients while preparing the dressing. To create an emulsified mixture, whisk together the olive oil, lime juice, cumin, salt, and pepper.
3. Spoon the steamed shrimp over the dressing. In the bowl, add the red onions and shredded lettuce, then mix with the dressing. Encircle the shrimp with the sliced avocados and sprinkle with fresh cilantro. Serve cold or room temperature.
