INGREDIENTS
⅓ cup powdered Swerve Sweetener (or other sweetener to taste)
1 cup chopped fresh strawberries divided
4 oz cream cheese softened
¼ cup heavy whipping cream
1 teaspoon lemon zest
1 ½ teaspoon lemon juice
½ cup protein powder (optional)
INSTRUCTIONS
1. In a large blender, combine the cream cheese, heavy cream, sweetener, protein powder, lemon zest, and lemon juice with a third of the strawberries. Process till smooth, then taste and adjust the sweetness to your preferred level.
2. Add the remaining chopped strawberries and whisk by hand. Evenly distribute the mixture among the six popsicle molds.
3. In each popsicle, insert wooden sticks about ⅔ of the way. Freeze for at least 4 hours, or until firm.
4. After heating up some water in the kettle and running it over the mold’s exterior for a few seconds, remove the mold by gently tugging on the stick.
