INGREDIENTS

2 cloves garlic, minced
2 teaspoons sesame oil
1 medium head cauliflower or 10 oz bag frozen cauliflower rice
1 medium carrot, cubed
3/4 teaspoon sweetener of choice
1/4 cup finely diced red bell pepper
1/4 cup finely diced green bell pepper
2 eggs, lightly beaten
2 – 2 1/2 tablespoons soy sauce or liquid aminos
Sliced green onions for garnish

INSTRUCTIONS

1. If you’re using a head of cauliflower, chop it up into florets and put it in the food processor. Pulse until very finely chopped and mixture resembles rice. Another option is to use a hand grater to rice the cauliflower.
2. Heat the sesame oil in a large skillet or wok on high. Cook for two to three minutes, or until the carrots are starting to get soft. Once aromatic, add the garlic and simmer for one minute.
3. Add the riced cauliflower to the skillet, stirring constantly, and simmer for 5 minutes. Cook cauliflower rice until the moisture has been cooked out and the rice is fluffy. If you’re using frozen cauliflower rice, just pour the frozen rice into the skillet.
4. Add the chopped green and red bell peppers. Cook until slightly soft, stirring periodically, for 3 to 5 minutes.
5. Switch the heat down to low-medium. Make a well in the wok or skillet by pushing the rice and veggies to the sides. Add the scrambled eggs to the center and cook until set. Mix the eggs with the veggies.
6. Add sugar and soy sauce or liquid aminos. Mix well to blend. Taste and adjust the seasoning, adding additional soy sauce, sugar, or sesame oil as needed. Add some sliced green onions as a garnish.
