INGREDIENTS

For the salad:

¼ cup thinly sliced and roughly chopped radishes
¼ cup sliced almonds
5 to 6 ounces baby arugula
2 oranges, peeled and sliced into thin rounds
2 ounces goat cheese, crumbled (about ½ cup)
Pinch of ground cinnamon, to sprinkle on top

For the lemon dressing:

3 tablespoons lemon juice
¼ cup extra-virgin olive oil
1 ½ teaspoons honey
¼ teaspoon salt

INSTRUCTIONS

1. Toast the almonds in a small skillet over medium heat, stirring frequently, for about 5 minutes until fragrant and golden. Transfer to a bowl to cool.
2. Place arugula on a large platter or in a bowl. Arrange oranges, toasted almonds, goat cheese, and radishes on top. Lightly sprinkle with cinnamon.
3. In a small bowl, whisk together olive oil, lemon juice, honey, and salt. Adjust honey if too tart.
4. When ready to serve, drizzle the dressing over the salad, toss, and serve immediately.
