With its lusciously smooth sauce, infused with the irresistible flavor of creamy Boursin cheese, this dish turns every bite into a flavor-packed delight. It’s a comforting, decadent twist on your usual pasta—simple to make, yet fancy enough to feel like a little culinary adventure. INGREDIENTS
1 (5.2 ounce) package Boursin with garlic and herbs
2 cups sliced mushrooms
3 tablespoons extra-virgin olive oil, divided
1 10-ounce package grape tomatoes
1 teaspoon Italian seasoning
8 ounces whole-wheat rotini or penne
2 large cloves garlic, minced
½ teaspoon salt
½ teaspoon ground pepper
2 cups boiling water
4 cups packed baby spinach
¼ teaspoon crushed red pepper (optional)
INSTRUCTIONS
1. Turn the oven on to 400°F. In a 9 by 13-inch baking dish, combine the tomatoes, mushrooms, 2 tablespoons oil, Italian seasoning, and crushed red pepper, if using. Boursin should be in the middle. Bake for about 20 minutes, or until the tomatoes are bubbling and broken down.
2. Place the pasta and garlic in the baking dish. Add a dash of pepper and salt. Pour boiling water into the mixture and gently whisk. Once the pasta is soft, bake it covered with foil for about 20 minutes, stirring once.
3. Meanwhile, put the spinach in a medium bowl. Drizzle with the remaining 1 tablespoon oil and massage until the volume is decreased by half.
4. When the pasta is soft, take the baking dish out of the oven and give it one more stir. Stir in the spinach until combined. It will be a really saucy spaghetti. To allow the spinach to wilt and the sauce to thicken, cover and leave the dish for at least 20 minutes.
