Ingredients
1 1/2 cups almond flour, 175 grams
3 Tablespoons coconut flour
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/4 teaspoon sea salt
2 eggs
1/2 cup cane sugar, or coconut sugar
1 teaspoon vanilla
1 cup pumpkin, canned or homemade
1/3 cup mini chocolate chips, I used Enjoy Life
vanilla frosting, for piping
Instructions
1. Prep: Preheat oven to 350°F and line a baking sheet with parchment.
2. Mix dry ingredients: Mix dry ingredients (flour, pumpkin pie spice, baking soda, and sea salt) in a mixing bowl.
3. Mix wet ingredients: Mix wet ingredients (eggs, pumpkin, sugar, and vanilla) in a separate mixing bowl.
4. Combine: Combine wet and dry ingredients. The dough will seem wet for a cookie dough. This is ideal!
5. Add chocolate chips: Stir in 1/3 cup chocolate chips.
6. Scoop: Use a medium cookie scoop to scoop and place cookies on the prepared cookie sheet. Press cookie dough down into a cookie shape with a spoon or your fingers. Cookies won’t spread much, so you can space them about 1 inch apart.
7. Bake: Bake for 15 minutes.
8. Cool: Move cookies to a wire rack and cool completely.
9. Decorate with frosting: add frosting to the piping bag fitted with a #44 or #45 tip and pipe the frosting across each cookie, one at a time. Use different angles and overlap some of the lines until most of the cookie is covered. Place a tiny bit of frosting on the back of two candy eyeballs and attach them just above the center of each cookie.
10. To store: store leftover cookies in a container in the fridge for up to one week.
Monster Wraps

Favorite sandwich filling

Sliced pimiento-stuffed olives, for eyes
Whole olives, for bolts
Cornichon pickles, whole for bolts, halved for eyebrows and nose
Instructions
1. Fill each wrap with the desired sandwich filling and roll up like a burrito. Cut cheese slices and/or nori in half and cut triangle shapes for hair. Place on 1 half of the wrap. Cut the remaining half into long strips for the mouth. Cut the smallest cornichons in half lengthwise for eyebrows. Cut a thin slice for the nose. Place olive slices for eyes.
2. Use toothpicks to secure 2 olives or cornichons to sides of wrap for Frankenstein’s bolts.
Pumpkin Spice Pretzels

24 oz. white chocolate
1 tsp. pumpkin pie spice
2 drops orange food coloring (optional)
8 oz. pretzel twists (about 1/2 of 1 lb. bag)
Orange sprinkles (optional)
Instructions
1. Line three large baking sheets with parchment paper or silicone baking mats.
2. Melt 20 ounces of white chocolate in a double boiler or the microwave. If using the microwave, make sure to stop and stir chocolate every 15 seconds to avoid scorching.
3. Once melted, stir pumpkin pie spice and orange food coloring into chocolate. Dip the pretzel three-quarters of the way into the warm chocolate, remove, and gently shake to allow excess chocolate to drip off. Place the pretzel onto a prepared baking sheet and let the chocolate set. Repeat with remaining pretzels.
4. Melt remaining white chocolate and drizzle over pretzels. Top pretzels with sprinkles. Allow chocolate to completely set in the refrigerator before serving.

1. DARK CHOCOLATE: Coarsely chop the chocolate into small pieces.
2. COMBINE: in a large bowl, add the chopped chocolate, 1 cup creamy peanut butter, 1/2 cup honey, 2 tablespoons cocoa powder, 1/8 teaspoon sea salt, 1 scoop chocolate protein powder, 1 and 1/2 cups old-fashioned oats, and 1 teaspoon vanilla extract. Using a hand mixer, beat until the mixture is well combined.
3. SCOOP: Using a cookie scoop or 1-tablespoon measuring spoon, scoop even-sized amounts of dough and roll them into balls. Place on a parchment-paper-lined plate and freeze for 15 minutes before eating.
4. STORAGE: Store in the fridge for 1-2 weeks or in the freezer for up to 3 months. We like these best straight from the freezer (thawed for 5 minutes or so at room temperature)!

1. Slice the top of the navel orange. Run a knife around its interior to hollow it out.
2. Scoop out the orange segments and reserve them for filling. Carve pumpkin face on one side of the orange. Repeat for other oranges.
3. Use a paper towel to gently soak up any remaining juice inside the oranges. Dice up desired fruit, including the reserved orange segments, and fill each cup. Set the lid back on top and serve.

Instructions
1. In a bowl, mash the avocado. Add the garlic, onions and lime juice and mix until well combined. Season with sea salt for flavor.
2. Add the guacamole to the lower half of a serving plate.
3. Create the corn chip hat first and then add the carrots for the hair.
4. Assemble the face and serve!
Healthy Pumpkin Spice Blender Muffins (No Added Sugar!)
Healthy Pumpkin Spice Blender Muffins are a quick and nutritious treat, perfect for fall. Made with wholesome ingredients like oats, pumpkin puree, and warm spices, these muffins are blended for easy prep and contain no added sugar. They’re naturally sweetened with bananas or dates, making them a guilt-free option for breakfast or snacks!
Ingredients
3 eggs
1 teaspoon vanilla
1 cup pumpkin puree, not pie filling
1 cup pitted dates ~5-7 ounces
optional: hot water for soaking dates if needed
optional: ripe banana for added sweetness
2 cups rolled oats
1 teaspoon baking soda
½ teaspoon fine sea salt
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
¼ teaspoon nutmeg optional – can omit
¼ cup hemp hearts + more for topping
Instructions
1. If your dates are hard, or if your blender is old, I recommend soaking the dates in hot water for about 5 minutes.
2. Preheat oven to 350ºF.
3. Add all ingredients to a blender and blend until smooth. If you have an older or less powerful blender, you may want to blend the dates with the wet ingredients first before adding the oats!
4. Pour or scoop into 12 muffin cups (I use a silicone muffin pan), and bake at 350ºF for about 18-20 minutes.
5. Poke with a toothpick to check for doneness (toothpick should come out 90% clean) – let cool slightly and serve with butter!
Spooky Spider Deviled Eggs
Spooky Spider Deviled Eggs are a creepy and fun twist on the classic appetizer, perfect for Halloween. The deviled eggs are topped with black olive “spiders,” created using halved olives for the bodies and sliced olives for the legs. These eerie eggs are both delicious and festive, making them a hit at any spooky gathering!
Ingredients
6 hard-boiled eggs, halved
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon vinegar
1/8 teaspoon salt
1/8 teaspoon pepper

Instructions
1. Cut eggs in half lengthwise. Slip out yolks and mash.
2. Stir in mayonnaise, Dijon mustard, vinegar, salt, and pepper.
3. Cut whole olive in half lengthwise.
4. Put one half on mashed yolk for the spider’s body.
5. Thinly slice the other half of the olive for the spider’s legs. Put four legs on each side.
Spooky Turkey & Veggie Stuffed Bell Peppers
Spooky Turkey & Veggie Stuffed Bell Peppers are a fun, Halloween-themed dinner idea. Bell peppers are carved to look like jack-o’-lanterns and filled with a flavorful mix of ground turkey, vegetables, and spices. Baked to perfection, these stuffed peppers are both nutritious and festive, making them a deliciously spooky option for a healthy Halloween meal!
Ingredients
4 bell peppers
1/2 lb. ground turkey (optional)
1/3 cup chopped zucchini
1/4 cup chopped broccoli
1/4 cup chopped tomatoes
2 cups tomato sauce (sugar-free)
2 cloves garlic
1/2 diced onion
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
Instructions
1. Sautee garlic and onion in coconut oil on the stovetop over medium-high heat.
2. Add in ground turkey and veggies, then stir in sauce and other herbs. Cook until turkey is medium done, meanwhile carving out 4 orange bell peppers.
3. Carve jack-o-lantern faces into your bell peppers and save the tops for decoration (optional).
4. Scoop the pepper filling into each carved-out pepper.
5. Spoon a tsp parmesan cheese on top of each pepper (optional), then top with its “lid.” Bake at 425-430 degrees for 35 mins.
6. Let cool 5-10 mins, then enjoy!
Silly Apple Bites
Silly Apple Bites are a fun and healthy snack, perfect for kids. Made by cutting apple slices into “mouths” and stuffing them with peanut butter, then using almonds or sunflower seeds for “teeth” and strawberries or grapes for “tongues,” these playful apple bites are both nutritious and entertaining. They’re great for parties or as a creative snack option!
Ingredients
2 green apples, each quartered
sunflower butter
32 sunflower seeds
2–3 strawberries, sliced
1–2 homemade googly eyes per apple bite
Instructions
1. Cut the middles out of each quarter of the apple to create a mouth. Don’t worry about perfection, you are filling this gap with sun butter anyway so if you cut too deep, you can always just cover it up and no one will know.
2. Coat the inside of the cut gap with a filling of sunflower butter.
3. Place 4 sunflower seeds on the top of the “mouth” for the teeth.
4. Place 1 sliced strawberry inside the mouth for the tongue.
5. “Glue” each eye above the mouth with a dab of sun butter to stick.
6. Serve with a smile.
