Lemony Chickpea Soup

Makes 4 servings

Brighten your bowl with Lemony Chickpea Soup! This zesty, hearty dish blends tender chickpeas with a burst of lemon and fragrant herbs. It’s light, comforting, and the perfect way to add a little sunshine to your meal!

INGREDIENTS

1/2 tsp dried thyme
1/2 tsp dried oregano
1 pinch crushed red pepper
1 lemon
3 15oz. cans chickpeas, divided
4 cloves garlic
2 Tbsp olive oil
2 cups chicken broth
1/4 tsp salt (or to taste)
1/4 tsp Freshly cracked black pepper

INSTRUCTIONS

1. Puree 2 chickpea cans with their liquid in a blender until smooth. Drain and reserve the third chickpea can.
2. Add olive oil and minced garlic to a saucepot. Sauté garlic over medium heat for one minute until fragrant. Add the puréed chickpeas, drained chickpeas, chicken stock, thyme, oregano, red pepper, salt, and pepper to the soup pot along with the garlic. Mix well.
3. Simmer the soup for 10 minutes, stirring occasionally.
4. While the soup simmers, juice and zest half a lemon (2 Tbsp juice, ½ tsp zest). Slice the remaining lemon for garnish.
5. Stir in 2 tablespoons juice and a pinch of lemon zest once the soup simmers.
6. Taste the soup and add salt, lemon juice, pepper, or herbs to taste. The amount of salt required to adequately flavor the soup depends on the salt concentration of your broth, so season to taste at the end.
7. Add the remaining lemon slices and zest, a sprinkle of olive oil, and more pepper to taste. Serve with crusty bread and enjoy!
