Sweet & Sour Chicken

Makes 4 servings

Get ready for a flavor explosion with Sweet & Sour Chicken! This dish combines crispy chicken with a tangy, sweet sauce that’s perfectly balanced and totally irresistible. It’s a delicious mix of bold flavors that’ll have your taste buds dancing with every bite!

INGREDIENTS

8 ounces small broccoli florets
1 pound boneless, skinless chicken breasts, cut into bite-size pieces
¼ cup no-salt-added ketchup
¼ cup pineapple juice
3 tablespoons reduced sodium soy sauce
1 tablespoon rice vinegar
2 teaspoons honey
¼ teaspoon salt
½ teaspoon ground pepper
2 tablespoons toasted sesame oil, divided
2 cups chopped red bell pepper

INSTRUCTIONS

1. Using a whisk, mix together the pineapple juice, soy sauce, vinegar, honey, salt, and pepper. In a big pan, heat up 1 tablespoon of oil over high heat.
2. Brown the chicken on both sides, which should take around 4 to 5 minutes. Transfer the chicken to a plate.
3. Clean the pan and put it back on high heat with the rest of the oil. Cook the broccoli and bell pepper for about 5 minutes, or until they are charred.
4. Add the onions and cook for one minute. Put the chicken back in the pan and add the sauce.
5. Cook until the sauce bubbles and coats the chicken. Spoon over rice.
