INGREDIENTS
6 large eggs
1 12-ounce can of evaporated milk (1½ cups)
1 cup granulated sugar divided
¼ cup water
1 (8-ounce) package cream cheese softened
1 14-ounce can of sweetened condensed milk (1¼ cups)
2 teaspoons vanilla extract
INSTRUCTIONS
1. Preheat the oven to 325°F. In a saucepan, melt ½ cup sugar with ¼ cup water, stirring until amber-colored. Pour the caramel into a 9-inch pie pan, swirling to coat the bottom, and let it cool.
2. In a bowl, beat cream cheese until smooth. Add 6 eggs, evaporated milk, condensed milk, vanilla, and orange zest, and mix until creamy. Pour this mixture over the caramel in the pie pan.
3. Place the pan in a larger roasting pan, fill with hot water up to 1 inch, cover with foil, and bake for 50-60 minutes. Cool on a wire rack, then refrigerate for at least 3½ hours.
4. To serve, run a knife around the edges, flip the flan onto a plate, and drizzle with any remaining caramel. Slice and enjoy!
