Quinoa Chickpea Salad with Roasted Red Pepper Hummus Dressing

INGREDIENTS

2 cups mixed salad greens
½ cup cooked quinoa
½ cup chickpeas, rinsed
1 tablespoon unsalted sunflower seeds
2 tablespoons hummus, original or roasted red pepper flavor
1 tablespoon lemon juice
1 tablespoon chopped roasted red pepper
1 tablespoon chopped fresh parsley
Pinch of salt
Pinch of ground pepper

INSTRUCTIONS

1. In a small dish, mix the sauce by mixing the hummus, lemon juice, and red peppers.
2. Add water as needed to get the right consistency. Add the chickpeas, quinoa, and greens to a big bowl.
3. Then, sprinkle sunflower seeds, parsley, salt, and pepper on top.
4. Add the dressing you just made and serve.
