- 4 oz mozzarella cheese
- 6 tbsps cream cheese
- 1/4 cup almond flour
- 1 jumbo egg
- 1 tbsp clarified butter ghee
Directions
- Combine cream cheese and mozzarella in a microwave safe bowl. Heat for 1-2 minutes until partially melted and stir. Microwave again for another minute and stir.
- Add half the almond flour and stir. Microwave again for a minute and then add remaining almond flour. Stir until everything is smooth.
- When mixture has cooled down a bit, add one beaten egg and stir in until it disappears. Don't add the egg to the mixture when it is really hot or it will cook the egg.
- Spoon into a hot oiled pan. Flip when one side is crispy and brown. Plate. Serve with sour cream and hot sauce.
- Makes 3 6-7" pancakes.
