- 12 oz jumbo pasta shells
- 1 dash pepper
- 1 dash salt
- 1/2 cup pineapple, diced
- 1/2 cup mango, sliced
- 1 kiwi fruit, diced
- 1/4 cup Dijon mustard
- 1/3 cup mayonnaise
- 1 oz shallots, chopped
- 2 1/2 cups cooked chicken, diced
- 4 oz salted cashews
Directions
- In a large bowl add chicken, shallots, mayonnaise, mustard and cashews, stir until well combined.
- Gently mix in the fruit and season with salt and pepper.
- Cook, drain and cool jumbo pasta shells.
- Spoon 2 tablespoons of chicken salad mixture into pasta shells.
- Refrigerate until serving.
