- 1/2 head medium cauliflower
- 1 cup eggs
- 1/2 cup peas and carrots
- 1 tsp pepper
- 1 tsp salt
- 1 tbsp sunflower oil
- 2 medium spring onions, diced
Directions
- Rice cauliflower in food processor.
- Heat oil, add vegetables and seasonings.
- When a bit translucent, push to side and crack and scramble egg on clear side.
- Drag vegetables through.
- Season with soy or ginger dressing, curry powder, or other spices (adding salsa makes a quick Spanish rice).
