- 4 medium zucchinis, grated
- 1 medium brown onion, chopped
- 3/4 cup bread crumbs
- 2 large eggs, beaten
- 1 tbsp mint
- 1 tbsp ground basil
- 2 tbsps extra virgin olive oil
- 1 dash pepper
Directions
- Combine drained zucchini with onion and breadcrumbs, eggs, herbs and pepper.
- Cook tablespoons of mixture until brown on both sides.
- Great with tzatziki.
