  • 4 medium zucchinis, grated
  • 1 medium brown onion, chopped
  • 3/4 cup bread crumbs
  • 2 large eggs, beaten
  • 1 tbsp mint
  • 1 tbsp ground basil
  • 2 tbsps extra virgin olive oil
  • 1 dash pepper

Directions

  • Combine drained zucchini with onion and breadcrumbs, eggs, herbs and pepper.
  • Cook tablespoons of mixture until brown on both sides.
  • Great with tzatziki.
