Ingredients

  • 3 tbsps honey
  • 1 package bakers yeast (active dry)
  • 1 3/4 cups water
  • 1/2 cup instant oatmeal
  • 1 tbsp extra virgin olive oil
  • 1 tbsp almond flour
  • 1 cup almond meal flour
  • 2 cups finely ground tapioca flour
  • 2 large eggs
  • 1/2 tsp salt
  • 1/4 cup chopped walnuts
  • 1 1/2 tsps xanthan gum
  • 1 1/2 cups brown rice flour

Directions

  • Mix warm water (110°F), honey, oats, oil and yeast. Let stand for 10 minutes.
  • Put remaining dry ingredients into a bowl and whisk until well blended.
  • Add eggs (room temperature) and yeast mixture using a mixer.
  • Pour the batter in a bread mold lined with parchment paper. Decorate as desired.
  • Bake on center rack at 375°F for 1 hour or until internal temperature reaches at least 200°F.
  • Let cool for 10-15 minutes before removing parchment from pan. Let the loaf cool completely before cutting.
