  • 3 small bananas
  • 1/2 cup packed raisins
  • 1/2 cup sugar
  • 1 1/2 cups flour
  • 1 1/4 tbsps butter
  • 2 large eggs
  • 1/2 cup pieces or chips walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 2 1/2 tsps baking powder
  • 1/2 tsp salt

Directions

  • Pour hot tea over raisins and allow to soak while you prepare the rest of the ingredients.
  • Pre-heat oven to 340 °F (170 °C).
  • Sift flour, baking powder, baking soda and salt into a bowl. Melt the butter and combine it with the sugar in another bowl, then add the eggs one at a time.
  • Mash the bananas and add these to the wet ingredients too.
  • Stir in the walnuts, drained raisins and vanilla extract.
  • Finally stir in the flour mixture a third at a time.
  • Scrape into a loaf tin (buttered and floured) and bake for 1 hour until a skewer comes out clean.
