  • 28 ml almond milk original unsweetened
  • 1 1/2 cups almond flour
  • 3 cups shredded mozzarella cheese
  • 2 large eggs (whole)
  • 1 tbsp baking powder (sodium aluminum sulfate, double acting)

Directions

  • Preheat the oven to 350°F. Line a large baking tray with parchment paper and set aside.
  • In a small saucepan, heat mozzarella cheese and milk until melted.
  • Transfer the cheese mixture into a large bowl. Let sit for 2 minutes to cool slightly. Add almond flour, eggs, and baking powder. Mix well until combined.
  • Using your hands, form the dough into a ball. Divide into 8 pieces. Roughly flatten out into off-shaped circles. Place on the lined tray.
  • Bake for 18-20 minutes until puffed up and golden brown. Remove from the oven and let sit for 10 minutes before serving.
