Ingredients

  • 2 tbsps bacon drippings
  • 1 1/2 cups yellow degermed cornmeal
  • 1 1/2 tsps baking powder
  • 5 tbsps buttermilk blend powder
  • 1 1/4 cups water
  • 1 large egg
  • 1 tsp salt
  • 1/2 cup all-purpose flour

Directions

  • Preheat oven to 400 °F (205 °C).
  • Place bacon drippings in cast iron skillet and place in heating oven.
  • When cast iron skillet is hot and drippings melted, mix all dry ingredients together.
  • Add egg to water and mix.
  • Add egg mixture to dry ingredients and stir.
  • Pour most of bacon drippings into batter from skillet and stir. Then pour batter into hot skillet.
  • Bake for 30 minutes. Remove promptly.
