Ingredients
- 2 tbsps bacon drippings
- 1 1/2 cups yellow degermed cornmeal
- 1 1/2 tsps baking powder
- 5 tbsps buttermilk blend powder
- 1 1/4 cups water
- 1 large egg
- 1 tsp salt
- 1/2 cup all-purpose flour
Directions
- Preheat oven to 400 °F (205 °C).
- Place bacon drippings in cast iron skillet and place in heating oven.
- When cast iron skillet is hot and drippings melted, mix all dry ingredients together.
- Add egg to water and mix.
- Add egg mixture to dry ingredients and stir.
- Pour most of bacon drippings into batter from skillet and stir. Then pour batter into hot skillet.
- Bake for 30 minutes. Remove promptly.
