  • 1/4 cup flaxseed meal
  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 5 tbsps coconut oil
  • 2 1/3 cups water
  • 1 cup chocolate chips
  • 1/3 cup 100% maple syrup
  • 1 tsp salt
  • 1 1/2 cups mashed banana
  • 5 cups oats

Directions

  • Preheat oven to 375 °F (230 °C). Prepare muffin tins with liners or non-stick spray.
  • Combine dry ingredients in one bowl and wet ingredients in a second bowl.
  • Add wet ingredients to dry ingredients and stir to combine.
  • Spoon batter into 32 muffin tins and cook for 25 minutes. Cool on wire rack.
  • Note: can be frozen.
