  • 126 g semi-sweet mini chocolate chips
  • 1/2 dash salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3 tsps baking powder (sodium aluminum sulfate, double acting)
  • 5 1/4 tbsps organic virgin coconut oil
  • 2 3/4 oz maple syrup
  • 2 3/4 fl oz 2% fat milk
  • 2 medium bananas
  • 2 large eggs
  • 1 cup almond meal flour
  • 1 1/2 cups oats
  • 45 g peanut butter chips

Directions

  • Mash the bananas and beat with wet ingredients.
  • Grind the oats to powder. Mix the dry ingredients.
  • Combine the two mixtures until smooth.
  • Fold in the chocolate and peanut butter chips.
  • Distribute evenly on lightly greased muffin tins.
  • Bake in preheated oven at 400°F for 20 minutes.
  • Let cool before removing from muffin tins.
