- 3 medium bananas
- 3 cups almond meal flour
- 1 tsp baking powder (sodium aluminum sulfate, double acting)
- 3 large eggs
- 2 tbsps 72% cacao dark chocolate chips
- 1/2 tsp baking soda
- 1 oz pecans
- 1/4 cup california sun-dried raisins
- 2 tbsps cinnamon
- 1 tsp vanilla extract
- 1 tbsp maple syrup
Directions
- Preheat oven to 350°F.
- Mash two bananas in a bowl. Add eggs, vanilla, and maple syrup.
- Mix flour, baking powder, cinnamon, and baking soda.
- Combine the two mixtures and stir until smooth.
- Add chocolate chips and raisins.
- Distribute in muffin tins and garnish with remaining banana and pecans.
- Bake for 30 minutes.
