  • 1 1/2 cups whole wheat flour
  • 1/2 cup dried cranberries
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 0.12 tsp nutmeg
  • 3/4 cup packed brown sugar
  • 1/4 cup canola oil
  • 1/2 cup orange juice
  • 2 large egg whites
  • 1 tsp orange rind

Directions

  • Combine flour, cranberries, baking powder, baking soda, cinnamon, salt, and nutmeg. Whisk together.
  • In a separate bowl combine brown sugar, oil, juice, orange peel and eggs. Whisk together.
  • Combine both mixtures together. Mix well.
  • Bake at 375 °F (190 °C) for 17 minutes.
