  • 1 cup 100% pure pumpkin puree
  • 2.5 g coarse kosher salt
  • 1 tsp vanilla extract
  • 1/4 tsp cloves (ground)
  • 61 g greek vanilla yogurt
  • 213 g all purpose flour
  • 6 tbsps virgin coconut oil
  • 1 tsp baking soda
  • 2 large eggs
  • 1 1/2 tsps cinnamon
  • 1 tsp allspice ground
  • 1/2 tsp nutmeg (ground)
  • 2 g baking powder
  • 1/2 cup honey

Directions

  • Preheat oven to 350°F.
  • Melt coconut oil in a large bowl. Whisk in honey and pumpkin, then eggs, yogurt, and vanilla.
  • Mic dry ingredients in a separate bowl.
  • Combine the two mixtures with a spatula.
  • Divide into muffin cups and bake for 15-20 minutes.
  • Cool the muffin tin on a wire rack for 10 minutes, then remove from tin and allow to cool completely.
