Ingredients

  • 1 small chopped tomato
  • 1 tsp pepper
  • 1 tsp salt
  • 5 tsps hot sauce
  • 1/2 cup shredded colby jack cheese
  • 1/4 tsp garlic powder
  • 1/2 cup chopped onion
  • 4 tbsps chopped green onion
  • 6 thin slices bacon
  • 12 large eggs

Directions

  • In a skillet, cook chopped bacon over medium heat until cooked through. Drain grease.
  • In a bowl, beat the eggs. Add onion, green onion, tomato, salt, pepper, garlic powder, and hot sauce (like Tapatio brand).
  • Stir in bacon and cheese.
  • Spoon by 1/3 cupfuls into greased muffin cups.
  • Bake at 350° F (175° C) for 20-25 minutes or until tops are set and a knife inserted near the center comes out clean.
