  • 1/4 cup lowfat milk
  • 2 large eggs
  • 1 dash ground pepper
  • 1 tsp vanilla extract
  • 1 tbsp margarine
  • 3/4 cup oat meal
  • 1/2 cup applesauce
  • 1/4 cup packed raisins
  • 2 cups pumpkin pie mix
  • 1/2 cup chopped walnuts
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup whole wheat flour

Directions

  • Pre-heat oven to 350 °F (175 °C).
  • Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet.
  • Add dry mix to the pumpkin and stir until just blended.
  • Lightly grease muffin pans with margarine (optional) or use non-stick spray.
  • Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife).
  • Let cool 15 minutes and enjoy.
