  • 1 cup whole wheat flour
  • 1/2 cup flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 3 tbsps vegetable oil
  • 1 cup nonfat milk
  • 1/2 cup ground flaxseed
  • 1/2 cup quick oats

Directions

  • Mix all ingredients.
  • Divide into mini muffin cups.
  • Bake at 400 °F (200 °C) for 10 to 15 minutes or until they are done.
  • To test doneness insert a toothpick, and if clean when you pull it out it is done.
