Ingredients

  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 dash salt
  • 3 tbsps butter
  • 1/4 cup unpacked brown sugar
  • 1/4 cup whole wheat flour
  • 1/2 cup 100% pure pumpkin
  • 2 tsps pumpkin pie spice
  • 1/4 cup whole milk
  • 1 tbsp avocado vegetable oil
  • 1 cup dry old fashioned oats
  • 2 large eggs

Directions

  • Preheat oven to 350°F.
  • Mix flour, brown sugar, cinnamon, salt, and butter. Set aside for topping.
  • Mix remaining ingredients in blender until smooth.
  • Pour batter evenly in muffin cups. Sprinkle topping on top of each cup.
  • Bake for 15 min or until toothpick comes out clean.
