  • 3 1/3 cups liquid egg whites
  • 3 oz crumbled goat cheese
  • 1 medium red bell pepper
  • 1/2 cup pure almond milk - original
  • 8 oz, raw, yields mushrooms
  • 5 oz baby spinach

Directions

  • Whisk liquid egg whites and almond milk together.
  • Wash vegetables. Slice mushrooms and bell pepper.
  • Spray a pan with cooking spray. Mix all ingredients and pour in the pan.
  • Bake at pre-heated oven at 400°F for 30 minutes.
