Ingredients

  • 2 oz milk (nonfat)
  • 2 oz crumbled goat cheese
  • 8 eggs (large)
  • 2 small bell peppers
  • 1 small onions
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 9 slices bacon

Directions

  • Sauté vegetables in olive oil. Add chopped bacon and paprika.
  • Whisk eggs with milk.
  • Divide vegetable mixture into muffin tins and add 1 tsp goat cheese to each.
  • Pour in beaten eggs.
  • Bake at 325°F in a water bath covered with a sheet pan for 25 minutes or until set.
