Cheesy Bacon & Egg Casserole

  • 1/2 lb turkey bacon
  • 2 cups shredded cheddar cheese
  • 7 large eggs
  • 2/3 cup 2% lowfat milk
  • 1 cup pieces or slices mushrooms
  • 1 cup chopped onions
  • 1 tbsp canola oil

Directions

  • Sauté onions and mushrooms in canola oil.
  • Blend eggs and milk.
  • Mix in cheese, crumbled bacon, onions and mushrooms. Pour in casserole dish.
  • Bake in pre-heated oven at 350 °F (175 °C) for 30 minutes or until done. You may have to stir casserole half way through cooking time.
