Turkey Bacon and Vegetable Frittata

  • 7 slices lean turkey bacon
  • 4 large eggs
  • 4 large egg whites
  • 2 dashes pepper
  • 2 dashes salt
  • 1 tbsp grapeseed oil
  • 1/4 tsp hot sauce
  • 3 tbsps chopped onion
  • 2 cups spinach
  • 8 oz zucchini

Directions

  • Cook bacon, set aside. Grate zucchini.
  • Sauté onions in oil, add shredded zucchini and spinach and cook until wilted. Pour into 8" pan.
  • Mix eggs, egg whites, salt, pepper, and hot sauce and pour over vegetable mixture.
  • Crumble bacon and sprinkle over entire pan.
  • Cook for 40 minutes at 350 °F (175 °C).
