Ingredients

  • 6 large egg whites
  • 6 oz turkey sausage
  • 3 cups diced potatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced

Directions

  • Brown turkey sausage in non-stick pan. Shred potatoes and brown with onions and garlic.
  • Mix egg whites, sausage and potatoes and dish into 6 non-stick muffin cups.
  • Bake at 350 °F (175 °C) oven for 20 minutes.
  • Save extra servings in fridge and microwave for 30 seconds on high.
