Ingredients

  • 4 tbsps vegetable oil
  • 3 green onions
  • 3 tsps minced garlic
  • 1/4 medium onions
  • 2.5 medium baby bella mushrooms
  • 6 large egg
  • 1 small russet potatoes (flesh and skin, baked)

Directions

  • Add oil to a pan and heat on low.
  • Dice onion add it and garlic to pan saute 5 min.
  • Dice and add mushroom cook for another 5 min then dice and add potato cook until just below fully cooked.
  • Beat 6 eggs and 3 tbsp of milk of choice till all one color.
  • Add eggs to vegetables mixture cook to done.
  • Top with green onions and serve.
