  • 1 tsp sugar
  • 2 tbsps vegetable oil
  • 1 large brown egg
  • 1 cup white flour
  • 1 cup skim milk
  • 1/4 tsp salt
  • 2 cups mashed banana
  • 2 tsps baking powder

Directions

  • Combine flour, sugar, baking soda and salt.
  • In a separate bowl mix together egg, milk, vegetable oil, and mashed bananas.
  • Stir flour mixture in to banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Cook until pancakes are golden brown on both sides; serve hot.
