Ingredients

  • 6 cups water
  • 10 tsps organic coconut sugar
  • 4 tbsps organic unrefined virgin coconut oil
  • 2 tsps ginger (ground)
  • 1 tsp cinnamon
  • 1 tsp nutmeg (ground)
  • 1/2 tsp black pepper
  • 1 cup coconut milk unsweetened
  • 1 cup organic basmati rice

Directions

  • Bring water and rice to boil in a large pot. Simmer while stirring occasionally until it begins to thicken. This should take about 20 minutes.
  • Add sugar, spices, and oil. Note: You may need to add an extra cup of water at this stage if the pudding is too thick.
  • Continue to cook slowly while stirring as needed. When consistency is gelatinous, add coconut milk. Cook for a few more minutes to thicken.
  • Transfer to a bowl then serve.
