Ingredients

  • 1/4 cup less sodium soy sauce
  • 1 cup sugar snap peas
  • 1/2 cup dry quinoa
  • 2 cups cooked mushrooms (fat not added in cooking)
  • 1 cup chopped young green onions
  • 1 bunch broccoli
  • 1 cup chopped sweet red peppers
  • 12 oz turkey light or dark meat (skin and bone removed, smoked, cooked)

Directions

  • Rinse quinoa then place in saucepan with 1 cup water. Bring to a boil then reduce heat and simmer for 15 minutes.
  • Wash and chop vegetables, then put in a lightly greased skillet. Stir fry until crisp-tender.
  • Add soy sauce and desired seasoning, then mix in quinoa.
  • Put in smoked turkey and stir for a few minutes.
