Ingredients

  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsps chopped chives
  • 1 tbsp drained capers
  • 1/4 cup mayonnaise
  • 1 tsp or 1 packet dijon mustard
  • 2/3 tbsp worcestershire sauce
  • 3 lbs rare roast beef
  • 6 oz cherry tomatoes
  • 2 cups shredded radicchio
  • 2 cups shredded or chopped lamb’s lettuce
  • 8 oz artichoke hearts
  • 1/3 cup chopped or diced cornichons
  • 1 dash salt
  • 1 dash pepper

Directions

  • Combine olive oil, lemon juice, chives, capers, salt, and pepper in a small bowl. Whisk together until well blended.
  • Combine mayonnaise, Dijon mustard, and Worcestershire sauce in a small bowl. Stir until well blended.
  • Divide the remaining ingredients among 6 serving plates.
  • Spoon the dressing over and place a tablespoon of mayonnaise in the center of each salad.
