  • 1/4 cup green bell peppers
  • 1/4 tsp himalayan pink salt
  • 1/4 cup arugula lettuce
  • 1/4 cup baby spinach
  • 1 tbsp extra virgin olive oil
  • 1 tsp minced garlic
  • 1 cup diced tomatoes and green chilies
  • 1/2 cup canned black beans (no salt added)
  • 5 peeled baby carrots
  • 1/2 cup frozen corn
  • 3 cubes chicken stock cubes (dry, dehydrated)
  • 1/4 cup pieces or slices mushrooms
  • 1/2 cup chopped onions
  • 1 chicken breast, bone and skin removed
  • 1 cup chopped zucchini
  • 1 cup flowerets broccoli flower clusters

Directions

  • In a large pan, sauté garlic and onions with olive oil until fragrant.
  • Add chopped chicken and cook until white.
  • Add vegetables one at a time, starting with the hardest ones.
  • Put chicken stock cubes and some water. Let it simmer for 10 minutes.
