Chinese Beef and Pepper Salad
A healthy beef salad with a tasty Asian flavor sauce.

- 1/3 cup soy sauce, light
- 2 tbsps extra virgin olive oil
- 1/3 oz dry sherry (1 tbsp)
- 2 servings 1 packet sugar substitute
- 1 tsp ginger
- 1 clove garlic, minced
- 1 lb london broil, cut into slivers
- 1 medium red bell pepper, cut into slivers
- 2 small scallions, sliced
Directions
- In small bowl, whisk together soy sauce, oil, sherry, sugar substitute like Splenda, ginger and garlic.
- Add beef and toss to coat.
- Cover and refrigerate for up to 1 day until ready to use.
- Drain beef and reserve marinade.
- Place beef on plate and toss with pepper and scallions.
- Serve with reserved marinade on side.
