- 1 skinless chicken breast
- 1/2 cup grapes
- 1/2 medium celery stalk
- 1/4 cup pecans, chopped
- 1/2 oz red onion
- 1 tsp Dijon mustard
- 3 tbsps fat free mayonnaise
- 1 1/2 oz nonfat plain Greek yogurt
- 50 leaves spinach
- 5 croissants
Directions
- Boil chicken breast for 20 minutes or until all pink is cooked out.
- Drain water and finely chop chicken breast. Spread out chicken breast on chilled plate and place in refrigerator for quick cool down.
- While chicken is chilling, finely chop all other ingredients except spinach then mix with chilled chicken in a bowl.
- Stir in mayonnaise, mustard and yogurt.
- Divide mixture into 5 parts and place on split croissants lined with 10 spinach leaves.
