Ingredients

  • 1/4 cup parmesan cheese
  • 1/2 tsp leaves dried oregano
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 tsps olive oil
  • 15 3/4 oz chicken broth
  • 1/2 cup chopped carrots
  • 1 clove garlic, minced
  • 1/2 cup chopped onions
  • 1 package spinach, thawed
  • 4 oz penne pasta
  • 14 1/2 oz italian style diced tomatoes
  • 16 oz white beans

Directions

  • Heat oil in saucepan, add carrots, onion and garlic, cook 5 minutes.
  • Add oregano, salt, pepper, broth and tomatoes; bring to a boil.
  • Cover, reduce heat and simmer 10 minutes.
  • Increase heat to medium-high; add pasta, beans and spinach; cook 14 minutes, or until pasta is done, stirring occasionally.
  • Sprinkle each serving with parmesan cheese.
