Ingredients

  • 2 large boiled eggs
  • 1/4 tbsp curry powder
  • 1/2 tbsp drained capers
  • 2 tbsps mayonnaise
  • 1 stalk small celery
  • 1 tbsp parsley

Directions

  • Peel the boiled eggs once cooled, and mash up in a bowl with a fork. Finely chop the celery stalk and parsley.
  • Combine all of the ingredients in the bowl with the mashed egg and stir to combine. Season with salt and pepper to taste.
  • Serve between two slices of bread and additional salad of your choice.
