Ingredients
- 2 oranges
- 1/2 fennel bulb
- 2 cups spinach
- 8 leaves basil
- 1 red onion
- 1/2 cup dried cranberries
- 1/2 cup pecan halves
- 1 cup crumbled goat cheese
- 1/2 cup olive oil
- 1/4 cup orange juice
- 1/4 cup balsamic vinegar
- 1/2 tbsp honey
- 5 cups garbanzo beans
- 3 cups of couscous (cooked)
Directions
- Mix liquid ingredients to make the dressing. Set aside.
- Mix couscous with the rest of the ingredients.
- Pour the dressing over the salad and season to taste.
