Ingredients

  • 1 cup chopped kale
  • 1 cup cooked quinoa (cooked)
  • 12 oz green string beans
  • 1 cup cubed butternut winter squash
  • 1 large potato
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup sliced red onions
  • 3 slices fully cooked bacon
  • 1 medium boiled egg
  • 3 tbsps red wine vinegar
  • 3 tbsps extra virgin olive oil
  • 1 tsp dijon mustard
  • 3 cloves garlic
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 mini avocado

Directions

  • Heat oven to 450°F. Slice the potato, green beans, and squash then place on a baking sheet.
  • Toss with olive oil, garlic, salt, and pepper, then roast for 25 minutes while stirring halfway through.
  • Chop bacon and egg. Shred kale to bite size.
  • Mix everything in a bowl.
