Ingredients
- 1 cup chopped kale
- 1 cup cooked quinoa (cooked)
- 12 oz green string beans
- 1 cup cubed butternut winter squash
- 1 large potato
- 1/4 cup raw pumpkin seeds
- 1/4 cup sliced red onions
- 3 slices fully cooked bacon
- 1 medium boiled egg
- 3 tbsps red wine vinegar
- 3 tbsps extra virgin olive oil
- 1 tsp dijon mustard
- 3 cloves garlic
- 1 tsp sea salt
- 1 tsp black pepper
- 1 mini avocado
Directions
- Heat oven to 450°F. Slice the potato, green beans, and squash then place on a baking sheet.
- Toss with olive oil, garlic, salt, and pepper, then roast for 25 minutes while stirring halfway through.
- Chop bacon and egg. Shred kale to bite size.
- Mix everything in a bowl.
