Vegetable Salad with Lemon Juice

A great detox salad for lunch.

Ingredients

  • 2 cups cubed avocados
  • 1 lemon yields fresh lemon juice
  • 1/4 block tofu
  • 1 cup pieces or slices boiled mushrooms
  • 1 cup boiled potatoes
  • 3 tbsps black olives
  • 1 cup cherry cherry tomotoes, halved
  • 2 cups shredded lettuce
  • 4 medium baby carrots

Directions

  • Simply chop all the ingredients up, and peel the potatoes.
  • Put the carrots, potato, mushrooms in boiled water, and let boil until they go soft.
  • Put all the vegetables in a bowl and mix together well.
  • Add freshly squeezed lemon all over salad.
