- 2 servings shrimp
- 2 servings scallops
- 2 tbsps olive oil
- 2 cloves garlic, crushed
- 1 tbsp green onions, chopped
- 1 fl oz lemon juice
- 1/4 cup chopped zucchini
- 1/4 cup cubed eggplant
- 1/4 cup pieces or slices mushrooms
- 1/4 cup chopped red peppers
Directions
- Heat oil in skillet over medium-high heat.
- Sauté vegetables for 3-4 minutes.
- Add thawed shrimp and scallops and sauté for an additional 2-3 minutes.
- Add garlic and green onions for the last minute.
- Stir in lemon juice before serving.
