Ingredients

  • 18 oz rockfish
  • 1 large egg
  • 2 medium onions
  • 1 slice white bread
  • 1/2 cup whole ultra-filtered milk
  • 3 tbsps unsalted sweet butter
  • 1/2 cup traditional panko bread crumbs
  • 1/4 cup olive oil

Directions

  • Soak white bread in a bowl with milk.
  • Grind fish with onions and wet bread.
  • Add egg and season to taste.
  • Form cakes and roll in breadcrumbs.
  • Heat olive oil and butter in a pan. Fry the cakes on both sides for 2-3 minutes over medium heat.
